trader joe’s zippy potato salad

you guys, (whoever that may be. is anyone out there?) i just made the world’s greatest potato salad. usually everything i make tastes like an old bag of rotten garbage. last week i made cornbread and it turned to a crumbling pile of dried out cornmeal. but my potato salad is edible!! not only is it edible, but people actually like it and are eating it voluntarily!! i suppose it is not too hard to mess up potato salad, but still!
unmixed potato salad
here is the recipe:
trader joe’s zippy potato salad
1.5 pounds of petite redskin potatoes
1 pound fingerling potatoes
16 oz. organic mayonnaise
3 tbsp organic yellow mustard
4 stalks of celery - diced
1/2 red onion - diced
3 tbsp wasabi mayonnaise
4-5 hardboiled eggs - chopped
salt and pepper to taste
cook potatoes in a large saucepan (or a dented pot like i did…) until soft when pierced with a knife. drain hot water and run cold water over potatoes until cool. cut potatoes into bite-sized pieces and place in a large bowl. add celery, onion, mayonnaise, salt, pepper, and mustard. stir until well blended. gently stir in the chopped egg. chill and serve.
i forgot the hardboiled eggs, but it was the most amazing potato salad in the world anyways.

The wasabi mayo sounds interesting.
I like to put a little bleu cheese in my potato salad. Black olives too.
